Kale Chips

Preheat oven to 275 degrees
Line cookie sheet with parchment paper
Use pre washed Kale or wash, cut and dry Kale leaves
Lay Kale on parchment paper in a single layer.
Spray with olive oil cooking spray or toss in a bowl with 1 - 2 tablespoons olive oil
Sprinkle with seasoning of choice.
Some of my favorites: Lemon Pepper and Salt, Seasoning Salt, Garlic Powder & Salt or just plain Salt.

Bake for 20 minutes.

This morning I decided to start on a new routine of working out and including my daughters somehow.  They are 5 & 2 so I needed something that would be an actual workout and fun for them as well.  We all love music and dancing (although I'm terrible at it ;)) so we decided to search on YouTube for Just Dance videos.  We had YouTube up on the TV and it was sooo much fun!  There was a great mix and the girls had a blast!  I love seeing the videos on YouTube because we got to see a blend of all the games instead of having to buy all the different versions.  So after 40 minutes of dancing, I got a great workout, they had fun and the day is off to a great start!  Now all we need is for the sun to stay out and play - Seattle in the spring has been pretty wet this year...
Very exciting day, I just placed an order for plantain flour and it should arrive in the next week!  I'm looking for some flour alternatives and this will hopefully work in some of my families favorite foods such as pancakes :).  There are recipes for fresh plantain pancakes, but I always seem to miss the right cooking times.  Because with plantains they either need to be very green or very ripe where the peel is almost black - never in-between.  So to solve my dilemma I've decided to try plantain flour so I can make pancakes whenever I want without having to run to the store.  Plantain Flour--It is simply ground dehydrated plantain.  It does have a distinct plantain taste so it doesn’t work in all baking.  It has a lovely ability to bind (similar to tapioca starch, but with more of a wheat flour like texture and crumb) and generally can be substitute wheat flour 1:1.  It seems to work very well in soft, cakey and/or chewy baking recipes and not as well if you want some crunch or crispness.  A word of caution:  Do not buy Plantain FuFu flour, this is a mixture of different tubers, often containing potato starch in addition to plantain flour.   If you are buying this from a store, make sure to check the ingredients label.

I had an interesting response to one of my posts on cafemom.com 
I was ranting about how hard it was to find an investor for my baby product and there was a comment from another mother that was concerned about they way the children were being fed.  Is eating through a bottle bad?  Is eating through a straw bad?  Is eating from a spoon bad?  
In every way the food ends up in the mouth and we chew and digest according to the consistency of the food.  I think the most important point is: what are we feeding our children?!  Puree veggies and fruit is the best, ask Jamba Juice or VitaMix.  Criticizing how we feed our children instead of looking at what we feed our children is a bit concerning.  With kids, comes input - from everyone.  Just remember Mom and Dad, that we are doing the best we can with what we have.  Feed them the best with the best tools you have!
Okay I just came across a site that is going to change the way we store our kids art work.  It's called www.colormethis.com and you can join for free, take pictures of your kids artwork, upload and store for free!  I'm super excited to have an easy to access filing system to document all of my daughters artwork.  This site allows me to organize by date, year or anyway I choose...I can then send pictures as ecards, create slide shows and so much more!  Totally excited about this awesome site and totally excited to free up some space in my garage ;)

As my children get older I feel that I'm getting even busier with activities that the easy to go food is just too tempting.  Personally I have to make an effort to prep fresh cut veggies and snacks for my children to they have things like carrot and celery sticks for snacks instead of chips and dip.  It's scary to think of what could be the culprit of this rising intolerance, but as parents we need to do as much as we can to keep healthy, whole foods in front of our children.

As many of you may know, for the last year I've been working on bringing to market an invention of mine.  Little Eaters - On the Go Feeders is a mess free food bottle that I've designed specifically for the on the go parent.  Children 4 months and up can enjoy eating good food while parents can enjoy the fact that their children are  not making a mess and not choking while riding in the car or stroller.
Over the past year since inventing this product, I've been working with a team of engineers and graphic designers to fine tune the final look and feel of the bottle.  I've also conducted extensive market testing and now I'm ready to manufacture Little Eaters!

Juicing veggies and fruit is a popular way to get kids to eat their vitamins.  I personally love to make smoothies with greens such as spinach and kale.  My favorite machine for this job is the Vitamix Blender because there is no part left out.  The WHOLE vegetable or fruit is used and my children are getting a fully balanced and power packed shake. Use Little Eaters to give all your kids a yummy shake as a snack at the park!
